Millionaire’s Shortbread

That classic combination of buttery shortbread, caramel and chocolate. Millionaires shortbread is pure decadence. It is also incredibly easy to make. Who knew?! I’ve tried more difficult bakes such as cinnamon rolls and cheese soufflé so this one was made a nice change.

I used a really simple recipe from the Hairy Bikers’ book Mums Know Best. It lists the ingredients and a basic method so I had to use a little of my baking know-how.

To start with I measured out 125g room temperature butter (I used salted), 50g caster sugar and 175g plain flour. I creamed together the butter and caster sugar then added the flour. I mixed with my finger tips until it was like breadcrumbs and then tipped it into the tin and pressed it down so it filled the bottom.

While doing this I had heated the oven to around 190°C or thereabouts (who knows with my oven!) The dough went into the oven for about 20 minutes until it was just cooked and going a little golden around the edges.

The cooked shortbread was placed on the side to cool down while I got to work on the caramel.

Once it was boiling I lowered the heat a little and continued to boil the caramel until it had reduced. I had to keep stirring it so it didn’t catch and burn but you really have to use your own judgement about how long to cook it for. You’re looking to cook it down enough so it sets proper and isn’t runny.

This got put into the fridge until the caramel had set enough to take the chocolate layer.

Here is where I added a little bit of me to the recipe. I love white chocolate so I added a white chocolate layer, which I think made it a bit more special. The white chocolate was melted over a bain-marie. Once it had melted I poured it over the now set caramel and spread it out.

Again, this was left in the fridge until the white chocolate was set. I then repeated the steps with some very tasty 72% dark chocolate.

I was in no rush to eat it so it stayed in the fridge to set until the next morning.

As you can see, the layers aren’t perfect but it tasted bloody brilliant. There have yet to be any bad reviews to this one! The only problem I ran into was that the chocolate slid off the caramel when it was sliced. Speaking to a friend, we worked out that it was probably the fat content of the white chocolate that did it so next time I’ll be putting the dark chocolate layer down first. Otherwise, a perfect bake!

    Anything with chocolate is my favorite recipe . This bread’s name only make me wanna try it .Rich name and rich in chocolate. Yum!!

    Your photos made me drool. I am in love with this Millionaire’s shortbread recipe. It is relatively easy to make too. I will try my hand making this and I will take your advice to put the dark chocolate layer first before the white chocolate.

    That’s quite easy to make (at least to me). 🙂 I’ll probably use 85% cocoa because I like my sweets more bitter. 🙂

      Definitely. Higher cocoa content will only make it richer and tastier!

    I’m the biggest fan of Ottolenghi and his latest cookbooks includes a recipe for a middle eastern version of Millionaire’s Shortbread. Imagine a crisp, shortbread base spread thick with a creamy tahini-halva blend, finished with glossy tahini caramel. It’s brilliant, and a thin slice makes for the perfect treat. x

    I have been having a very rough time today so you can only imagine how immensely your shortbread recipe appealed to me. It certainly did the trick of cheering me up a little so thank you for that. It looks delicious.
