If you’ve ever been to Scotland and had a full breakfast you will have experienced the joy that is tattie scones. They’re not exactly healthy but they really do add a lovely starchy lump to any hot breakfast.
I made them on a bit of a whim; we had no bread in the house so I thought I try making something we both enjoy. I had a look and found a recipe on on BBC Good Food. It is super simple with only 4 ingredients and really quick to make. And you know how much I like a nice easy bake!
The four ingredients are potato, flour, butter and salt.
Cook the potatoes then mash them and add the flour, butter and salt. Leave the mixture to cool a little then turn it onto a floured surface and give it a bit of a knead. Roll it out until it’s about 1cm thick then cut it into triangles.
Cook them on a hot greased griddle or heavy frying pan for about 4-5 minutes each side. And then it’s done.
Quick and tasty! I enjoyed mine with beans and a boiled egg but Lucy enjoyed hers with lashings of tomato sauce!
