I subscribe to the regular emails from BBC Good Food and particularly good recipe caught my eye; chicken gyros – Greek style chicken marinated in oregano, mint, garlic, lemon and spices.
I don’t have any kebab skewers and I don’t have a BBQ (or a garden) so I thought I would take the recipe and modify it for my purposes.
I followed the marinade as it is written. I swapped out the flatbreads for a recipe I’ve started using recently which has given amazing results.
The chicken thighs I had in the freezer were still in tact with skin and bones so I skinned and boned them. I don’t like waste so I froze the bones for broth and roasted the skin to make chicken skin “bacon”.
I combined the marinade ingredients in a bowl and then poured it over and massaged it in to the chicken thighs. I covered and put them in the fridge for a few hours until I was ready to start grilling them.
While the gyros were grilling, I made the flatbreads. I’d found a great recipe for soft flatbreads which worked brilliantly with the gyros. It’s really easy – melt together butter and milk, mix into the flour, combine and rest. After half an hour, cut it up into pieces and roll out into rounds. Heat a heavy bottom pan to a low/medium temperature and then brush the dough with a little olive oil before placing in the pan. When the dough is golden brown and a little puffed up, brush with a little more olive and then cook the other side. Keep going until you’ve cooked all the dough or you can even freeze it. It really is that easy.
The gyros recipe called for homemade tzatziki. I really couldn’t be bothered with that as it was only me who was going to eat it, so I bought some from the shop!
The recipe also called for a specific type of salad. I like to make my own so I chopped up some cucumber, tomato, iceberg lettuce and red onion. I dressed the salad with a little malt vinegar, salt and pepper. Super simple but really, really tasty.
This is perfect food for this time of year. As the weather improves, we tend to want lighter but satisfying meals. These chicken gyros hit all the right notes.
